Hard red wheat is higher in protein and gluten, making it best for baking bread.

Our flour is made from sprouted wheat, which means that the wheat berries are allowed to sprout before they are ground. Sprouted wheat is higher in protein, vitamins, and minerals, and is easier to digest. It also has more amino acids, fiber, and its nutrients are more bioavailable.
