Ingredients

Elderberries*, Cinnamon*, cloves*, ginger*, honey

My kit made less than 16 ounces. Why is that?

Evaporation may increase at different altitudes or in different size pans. Your elderberry syrup may be a little too concentrated. Just add water until you're at the 16 oz mark (after you add the honey). You can reduce evaporation by using a smaller pan and simmering, not boiling.

I have more than 16 ounces!

You need to simmer it a little longer!

Can I use my own honey?

Unless you live in the north Texas area, you might consider substituting raw, unfiltered honey from your own region. Just add 3 oz of your honey to the recipe (or more to taste), and use the honey you received in the kit for biscuits! For added allergy fighting benefits, also add a little local pollen (usually available from local beekeepers).

How long will the dry ingredients last?

Indefinitely if left sealed.

How long will the syrup last?

Your syrup should be kept in the refrigerator and consumed within 30 days.
